  • Jamaican Jerk recipe

    You asked for it, so here it is. Enjoy!

    2 tablespoons ground coriander

    2 tablespoons ground ginger

    2 tablespoons light brown sugar

    1 tablespoon onion powder

    1 tablespoon garlic powder

    1 tablespoon kosher salt

    1 tablespoon habanero powder (or cayenne pepper)
    2 teaspoons coarsely ground black pepper

    2 teaspoons dried thyme

    1 teaspoon ground cinnamon

    1 teaspoon ground allspice

    1 teaspoon ground cloves

    We substituted cayenne pepper instead of habanero pepper because ground habanero pepper is pretty
    expensive.
    Rub this on one side of a steak, and put salt and pepper other
    side. We used flat iron steaks but Dan says it can go on any cut (I have no idea what all the different cuts of steak mean, but Dan knows what he’s talking about I guess).

    And there you have it – YUM!!!

  • marrissa is getting so big.  cute pic.  2 questions – have you started potty training or sleeping in big bed yet?

  • @HappyAsCanBe33 - Nope, we haven’t started either yet, actually. She’s been acting pretty interested in parts of potty training, but is not quite there yet. I expect it to happen soon this summer. As far as the big bed goes, it’s a long story. Lol. My sister lives with us, in our guest room, and is using our guest double bed. But when she moved here, she also brought her own twin bed. Dan’s parents also gave us a twin bed to use for Marissa eventually. So in Marissa’s bedroom is her crib, Dan’s parents’ twin bed, and my sister’s twin bed! It’s crowded! For now, I’m perfectly happy having Marissa confined in her crib for sleeping! But lately she’s been freaking out about hairs on her sheets (her hair falls out at night), and won’t settle down, even if we “clean” it right in front of her, and even if there aren’t actually any hairs on it that day. So I’m thinking it might be time soon, just to get her away from the stupid hair issue. But at the same time, I really want to wait until my sister moves out (July/Aug) and takes her bed, so we don’t have a zillion beds in there. We’ll probably put her crib mattress on the floor and start the transition that way, and I’d rather she didn’t have too many beds to climb up on/fall off of. Great story, huh? Lol
